The BBQ sampling opens to the public at 2p. Event Attendees pay to get in, which gives them the right to samples and to vote for "People's Choice".
Each Event Attendee is provided three (3) voting tickets. They sample from all the teams and then decide how to cast their votes. They vote by placing their ticket(s) into a voting box which will be provided for you.
To be clear... This is not a ticket in exchange for a sample. This is not the State Fair.
ANYTHING GOES for People's Choice. You are not restricted to just the competition meats, although this is an opportunity to serve those leftover beans and brisket. This is an excellent opportunity to flex your creative muscles and to offer a unique bbq experience.
You should be prepared to serve 300 bite-sized samples.
We will provide plates, napkins, and plastic ware for the event attendees. However, you are welcome to use portion cups or similar to serve your samples.
Please reach us at Kristi@foebbqcookoff.com if you cannot find an answer to your question.
Only competition meat is subject to inspection upon arrival. Competition meat refers to those meat categories that are submitted to the judging room - Chicken thighs or legs, Pork Spare Ribs, and Brisket. These must be in original packaging and are subject to meat inspection upon arrival. Once inspected, you are free to commence your prep.
We will provide all the containers you need for submitting items to the judging room. Don't waste your money on garnishes or kale. We don't want anything in the box except the food entry. Any use of garnish or otherwise "marking" your container will result in disqualification.
This is a blind judging process, whereby the judges do not have awareness of the team numbers or team names that they are judging.
For Beans and Sauce, there will be one round of judging with a panel of up to 10 judges.
For Meat Categories, there will be two rounds of judging - a prelim round and a final round.
In the prelim round, judging will be done by a team of 5 persons at each judging table. The judge room official will determine the optimum number of tables of judges needed (usually 2 to 3). The top scores from each table will move on to the final round of judging.
In the final round of judging will be made up of a panel of 3 -5 judges, generally individuals with a depth and breadth of culinary and/or bbq experience. A Head Judge will be designated. In the event of a tie, the Head Judges score will be the tie breaker.
Beans - approximately one cup
Sauce - approximately one cup
Chicken / Ribs / Brisket - 10 individually identifiable samples. Why 10? Because we can have up to 10 judges collectively between prelim and final round.

You can arrive anytime Friday afternoon starting at 2pm and after. If you are going to be later than 11pm, notify us in advance. Please don't just swing by Thursday night or Friday morning and "drop off" your smoker, as designated spots will not be ready for you yet. If you require arrangements contact us.
You will get a spot that is roughly the size of three parking spaces. If you have an "oversized" smoker or a set up that cannot fit this space, please let us know in advance. I am sure we can work out a solution with advanced notice. You will not have space for personal vehicle or RVs at your designated spot. Once you unload, personal vehicles will need to be moved to adjacent parking areas.
You will have access to restrooms and running water (sinks in restroom plus water hoses outside) even after hours.
We DO NOT offer access to electricity. There are a few plugs in the vicinity where we will be set up. They are not reserved, they are not guaranteed, and they may not even work (LOL). Please plan accordingly. We only permit quiet/silent generators.
Dallas Fraternal Order of Eagles #3108 has a junior olympic-size swimming pool on our property. You are welcome to swim for free throughout the event. Bring appropriate swim wear.
